Technical notes : Grapes were harvested by hand between 27˚balling and transported to the cellar. Cold maceration was done for 48h at 10°C to capture the specific grapes flavour and enhance the colour. Pumpovers were done for an hour 3 times a day and rack and return at 15˚ balling. After malo-lactic fermentation, the wine was matured in French oak for 17 months. The wine was fined, sterile filtered and then bottled.
Description : Plum coloured and well structured wine with ripe stew fruit aromas, a hint of oak and chocolate finish. Perfect with lamb, ostrich and rich meat casseroles. In 4-6 years this wine will be at its peak.
